There are many vegan turkey recipes. The popular option is using wheat gluten that is excellent at recreating the texture of turkey and is a known crowd pleaser for non-vegans too. 

The key to a Thanksgiving vegan turkey is the familiar holiday flavors. Adding the right balance of herbs and seasoning will really make it memorable. Let’s not forget about all those delicious side dishes too. Thanksgiving is a great time to try out vegan holiday recipes.

Why Make Your Own Vegan Turkey?

Store-bought vegan turkeys are now widely available, but like many store-bought options, they are heavily flavored with sugars and often have a high salt content. 

It takes a little extra effort to make your signature vegan turkey, but once you do, you’ll enjoy the versatility. You can add any seasoning and spices you like, making it an excellent option for special year-round meals.

Vegan Turkey Recipe

Serving: 10

INGREDIENTS

  • 1 15fl oz can of chickpeas, rinsed and drained
  • 3/4 cup water
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 3 ½ cups of vegan “chicken” stock
  • 3 tablespoons nutritional yeast
  • 1/2 teaspoon seasoning – a mix of dried herbs. We like to include rosemary and thyme
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1 and 1/2 cups wheat gluten

EQUIPMENT

  • Food processor
  • Large glass mixing bowl – glass prevents the gluten from sticking too easily, but any large mixing bowl you have in your cupboard will work
  • Spatula
  • Medium pot
  • Steamer insert 

INSTRUCTIONS

  1. Put the chickpeas, nutritional yeast, water, 1 tbsp. of stock, soy sauce, herbs, and seasonings into the food processor and blend until smooth. 
  2. Next, pour the mixture into the large glass bowl, carefully scraping out the full mixture.
  3. Add in the wheat gluten, and using your hands, mix the wheat gluten into the mixture.
  4. Once the mixture is mixed and feels firm, remove from the bowl and knead the mixture on your countertop. It should start to slowly firm up after you kneed it 12 -15 times.  
  5. Shape the dough into a log shape.
  6. Take the medium pot and place the steam insert at the bottom.
  7. Place your vegan turkey roll onto the steamer insert and add the remaining vegan stock to the bottom of the pot. Cover with a lid and bring to the boil.
  8. Reduce the heat and simmer for 1 hour, checking after 30mins to ensure it’s not dried out. Add extra stock liquid as needed.
  9. Once cooked, carefully remove the turkey loaf and place it on a chopping board to rest for 15minutes before slicing. 

NOTES

  • On occasion, the wheat gluten takes a little longer to work into the mixture. Don’t worry; just keep kneading the mix until it is entirely worked into the dough.
  • To bring your vegan turkey to life, drizzle with a generous amount of vegan gravy. It’s Thanksgiving, after all!
  • Any leftover vegan turkey will keep for a few days in the refrigerator. It’s great to slice cold and add to sandwiches and wraps.
  • We like to steam this on the stovetop, but it will also work in oven steamers. 1hr at 350 degrees works well.

Vegan Thanksgiving Gravy

This is an easy gravy recipe that takes 10 mins and goes great with our vegan turkey. This will make enough for 8 servings. However, it’s easily increased if you like extra gravy for side dishes.

INGREDIENTS

  • 2 cups of vegetable stock 
  • 3 tablespoons of nutritional yeast
  • 1 teaspoon of onion powder
  • 1 tablespoon of soy sauce
  • ½ teaspoon of mustard
  • ¼ cup of flour ( all-purpose works great) 
  • 1 pinch of chopped herbs leftover from the vegan turkey

INSTRUCTIONS

  1. Put everything in a pot, bring to the boil.
  2. Simmer and whisk until the gravy thickens.
  3. If you think it’s too thin, add a small amount of flour and keep whisking.
  4. Enjoy your vegan turkey Thanksgiving dinner!
